Dr. Osborne: These are toxins produced By mold. They’re not the same thing as mold. Mold is a living thing, whereas the mycotoxin is, think of it as an exhaust and exhaust byproduct of mold, but mycotoxins suppress the immune system. They can upregulate certain components of the immune system creating, creating an inflammatory response, and they’re highly linked to cancer. So one of the biggest dietary sources of mycotoxin is grain consumption. Not everybody have problems with gluten so of course our immune system react to some gluten molecule. By making our immune system tolerate gluten without causing inflammation we could cure ourselves. I think the loss of function is a really great point. When I look at our population as a whole, people should be functional way into their ninety’s. Maybe the last six months or year of your life maybe you start to lose some function but I think the population we have now where people lose function in their fifties is really unacceptable.

Who Can This Book Help?

I don't know in what world these functional doctors live but a normal person can't eat such a strict diet forever. It would mean stop living. We are social animals....we have friends, a romantic partner, a career that involves lunch/dinners with colleagues (including your bosses), we want to go on vacations ecc. A diet as described in the book (and in other books written by other functional doctors) is completely impractical unless you are willing to give up literally everything. The patients rarely got any better, because the pain medications came with some pretty hefty side effects including gut damage, vitamin and mineral deficiency, hormone disruption, immune suppression, fatigue, liver damage…the list goes on and on. When I asked if we could apply some fundamental nutrition with these patients, I was told that nutrition had nothing to do with disease. It only goes to make scientific sense. We’ve studied it. We know this happens, but if we’re just thinking about this theoretically even. Every species has the ability to protect itself from predators or becomes extinct. So we look at grains in general. We look as legumes in general. They contain lectins and phytates and oxalates and other proteins like A Ti’s [inaudible 00:18:45] and inhibitors. These are proteins that shut down out pancreatic digestion. They shut down our ability to produce enzymes because these things don’t want to be digested by us. At what point do you just throw your hands up and say eff it and dive into a big bowl of pasta? If I’m gonna be in pain, I may as well live my life.
