I have over a dozen Indian cookery books, so finding one that I want to keep is increasingly rare, but AMMU is a real keeper. The book is well laid out. A complete index, plus recipes broken down in the front of the book under headings such as vegan, vegetarian, fish, brunch, dairy free, BBQ, family celebrations, comfort food, indulgent feats, etc. The print is dark enough and in a reasonable font size to make reading easy. I bumped it up one star due to the one star review left by someone because of the amount of recipes containing meat and the simplicity of other recipes, seriously?! I might note that all the recipes I copied are vegetarian.It is interesting to read that Khan’s mother, Ammu, was herself a pioneer in challenging the patriarchal restrictions by which women continue to be constrained. She founded a food business in India and Khan is the heir to her recipes. Asma has furthered her mother’s legacy and, through food, has worked to develop how women are thought about whether in domestic or professional kitchens. The book itself contains a variety of recipes that Asma loved from her childhood and she evocatively describes her memories of each dish so as to underscore its importance in her personal development whether as a child in Kolkata, Hyderabad and Madras, or a student at Cambridge University. The recipes traverse a number of regions and bring to the table a variety of dishes with influences from Bengali, Afghan, Mughlai and Turkish cuisines. I had to make some adjustments (no onions) due to current dietary restrictions, but I thought this was incredibly delicious. There was just the right amount of fenugreek to perfume but not overwhelm the dish. I used ground byadgi chile and whole sannam chiles and I thought the heat level was perfect. With over 100 recipes, easy-to-follow instructions and a photograph for every dish Ammu is an essential book for anyone wanting to make Indian comfort food at home.
