Best matched with mild or better still, neutral flavours. Take a look at my, no less than 12 violet recipes I’ve created, including; The London-based indie-pop band, Palma Violets, is named after the perfumed sweets! Also, Naomi Hamilton (an Irish singer) named her 2016 album after the purple confectionery too. Quite a catchy name if you ask me!

London. At Christmas I trundle down to the same, small, wooden roadside flower stall, about 5 miles from my home. Driving along Cornish lanes it’s an annual expedition to buy a posy to take to my violet-loving aunt. Such delicate flowers, so tiny, yet so robust in the heart of winter, I love my aunt’s oohs, and aaahs at being brought these flowers. Nozedar, Adele (4 September 2014). Great British Sweets: And How To Make Them at Home. London: Random House. ISBN 9781448161218. Violet flowers have a high vitamin C and A content. They have been used to treat colds and in cough syrups and for internal and external inflammations. They are also mucilaginous and I find them very gentle for the digestive system. Violets can be added straight into a bath, or added in the form of infused oil, vinegar or salt. Violets have always been a symbol of delicateness and aesthetics, and unequivocally a sign of approaching spring. No wonder then that these aromatic little blooms are a the embodiment of an Italian spring garden, a Lavolio and an edible flower favourite. The ancient Greeks used violet petals in their wine; in the 14th century, petals were used in a popular dessert with rice pudding, almonds and cream. It is said that violet sugar was king Edward I’s favourite, simply achieved by layering the flowers in jars of caster sugar (if you do try this at home, make sure that the violets are free of chemicals and pesticides; the longer you leave them in the sugar, the stronger the flavour will be).

The name of the British Indie pop band Palma Violets is derived from the Matlows confectionery. Irish singer Naomi Hamilton also released an album in 2016 named after the sweet.
