About this deal

Of the 5 different bread machine models we tested during production of The Ultimate Bread Machine Cookbook, this machine was one of my very favorites. If you want bread that is indistinguishable from by-hand breads, use the dough cycle to do all the mixing, kneading, and timing for the first rise. For 100% whole wheat or 15% dark rye/85% whole wheat (which can be a start to pumpernickel), I use 500 grams cool water, 600 g flour, 1/4-1/2 tsp yeast (depending on how warm the kitchen is), and 1 tsp salt. I found it rather satisfying to be producing such a large variety of loaves without putting in hardly any effort.

The paddle doesn't flap down and thus gets imbedded in the bread but that hasn't been as annoying as we thought it would be. So back to the bread maker and its “looks” – I’m semi-joking when I said I chose on appearances alone. I always start with my own tried-and-true white bread recipe to make sure that the machine works properly: 1 cup + 2 T water; 3 cups bread flour (all-purpose will do); 2 T butter; 1 tsp salt, 1 T sugar, and 2 tsp bread machine yeast (one packet will do. We poured in the water, added salt and a tablespoon of oil, then covered the water with flour and put the yeast in on top. I did not find that it moved all over the place possibly on the floor while in use actually very stable. The same recipe that works perfectly in another machine can sometimes be on the wet side in the Cuisinart. While I did have to make a few adjustments to the recipe included with the bread machine, they were easy changes. You’re better off eating a couple of slices of homemade bread with good, pure butter and some nice marmalade than eating one of those Special K bars or a bowl of crunchy nut cornflakes!If you need to let your dough rise longer, or take the bread out of the oven sooner, or bake your bread in a non-bread-machine shape, it's not a problem if you're not using the machine. The machine is very light and easy to move, so if you don't want it sitting on your counter you'll be able to easily stash it away someplace else and bring it out when you want to bake. loaf sizes, either 1000g/700g, are options for when you need to make larger or slightly smaller batches. Gluten-free recipes also make it possible for those with diet restrictions to enjoy freshly baked bread again. The only reason I use a bread machine is that I have arthritis in both thumbs and it's too painful to knead.
