The very special whisky spent over half a decade aging in European oak barrels, before being treated to a final maturation in a single Pedro Ximénez-seasoned cask. I have just opened and drank some Ballantine’s I bought at discount at a Morrisons in Bradford. Barley is soaked for two to three days and then regularly turned before it’s dried. Peat is the powering source for many kilns, which means it’s at this point of the process when the level of peatiness can be determined. What’s left after this process is malt.

A perfect example of this combined flavor profile comes in the form of its 12 Year Bowmore’s Single Malt Scotch. The 12 Year is all about balance: it combines subtle notes of lemon and sweet heather honey with Bowmore’s trademark peat smoke, leading to a delicious, long, and mellow finish. The bottle is transparent, but just barely. The glass is tinted a very deep burgundy color, meaning there’s almost no way you can see how much liquid is in the bottle — much less the color of that liquid. Further obscuring is the white waiter’s coat label, sporting some lettering that looks like it’s straight off an engraved invitation. There’s a faux wax seal at the bottom, and at the top, an image of the heraldic arms that were granted to the company in 1938.On the nose, these are kissing cousins. In the mouth, however, there are miles between these two. The 1970’s incarnation has body, force, presence, character, personality. It doesn’t entirely come off, but what it has to show for itself is excellent. The 2019 version – by way of contrast – is a wet blanket, a limp noodle, a wallflower, milquetoast, all the associated adjectives.
